Homemade Oven-Baked Breakfast Sausage Patties

Nothing says breakfast quite like the sizzle and pop of freshly cooked pork sausage patties. But making them on the stovetop can be a bit messy and dramatic. That's where these oven-baked breakfast sausage patties swoop in to save the day.

I wanted an easy breakfast sausage patties recipe that could be meal-prepped, made for breakfast on busy weekday mornings, and thrown together for lazy, late weekend brunches at home with family. I'm proud to say this recipe does the trick!

Ingredients for Paleo Breakfast Sausage Patties

When I said these baked sausage patties were easy to make, I wasn't lying! They only require one pound of ground pork and seven dried seasonings you probably keep stocked in your pantry:

  • 2 teaspoons ground fennel seeds or fennel powder (may also grind seeds in a coffee grinder, but omit for AIP elimination phase)
  • 1 ½ teaspoon dried oregano
  • 1 ½ teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon sea salt

If you prefer, you could swap the ground pork for ground poultry like chicken or turkey. This should not change the cooking time. Just opt for grass-fed, free-range meat when possible. Animals will have a better or worse fat quality depending on what they eat and how freely they can move.

When you decide to purchase and consume pasture-raised meat, consider sourcing your product directly from the farmer, as the price of grass-fed/pasture-raised meat can steeply vary from grocery store to grocery store. It's also beneficial to connect with or at least know of the farms your meat comes from and the farmers who are raising those animals for your consumption.

How To Make Sausage Patties in the Oven

  • Preheat the Oven: To 425 degrees (or 400 degrees on convection), and line a baking sheet with parchment paper.
  • Prepare Sausage Patties: Mix ground meat with spices until well blended. Form into rounds, making approximately 10-12 small patties by hand and squishing down flat. (You could also use a biscuit cutter for more uniform pieces.)
  • Bake the Sausage Patties: Place sausage patties onto the lined baking sheet in a single layer and bake for approximately 15-20 minutes, flipping halfway. Check the internal pork sausage cooking temperature before serving to ensure they're at least 160 degrees.
  • Serve and/or Store: Let the sausages rest for a couple minutes before serving to ensure they're cooked through and juicy.

How To Store, Freeze, and Reheat These Breakfast Sausage Patties

  • To Store: Allow them to cool before storing away in the fridge in an airtight container for up to four days.
  • To Freeze: Store in an airtight, freezer-safe container or plastic bag for up to up to one month.
  • To Reheat: Allow frozen patties to thaw in the fridge overnight, then come to room temperature on the counter (if time permits). Then, reheat in an iron skillet over medium-high heat until warmed through or in the microwave for 2-3 minutes at 30-second intervals.
