Slow Cooker Jambalaya Without Shrimp
My mom told me I shouldn't be too harsh on this recipe, but I cannot tell a lie. It was not good. I'm not going to tell you where I found the recipe, and I'm not going to show you a picture of it, because the picture is kind of pretty and deceptive, with rosy curled-up shrimp in a tasty-looking broth. Instead, you get my mama bird picture. This crazy bird built her nest at the top of a ladder that leans against the side of our house, and I've been fretting about their precarious spot for weeks. Mother's Day is so much fun, though. I hope you had a good time.
While I had a gut feeling that cooking shrimp for 2 hours in the slow cooker would result in strangely-textured shrimp, the recipe did hold promise. The shrimp were shell-on, which I thought might protect them from the heat, and I also used 1/2 stick of butter. You throw 1 pound shell-on shrimp in the slow cooker with 1/2 stick butter, 2 tablespoons each Worcestershire and lemon juice, some Tabasco, salt and pepper. To be fair, the recipe says to check on it every 30 minutes, and mine was probably done after 1 hour, but dinner wasn't ready yet so I left the shrimp in, on low. (Yeah, now that I type that I realize it was a pretty dumb move; maybe I should give the recipe another chance.)
Overcooked shrimp are not good, by the way. These were kind of mealy, like a bad apple. Not tough, not mushy, just like overcooked chicken or something. They were bland, too, and didn't soak up all the good flavors in the crock. I don't know. Have you successfully cooked shrimp in the slow cooker? We threw most of the shrimp out, which was painful because it was so expensive. But it was part of a Mother's Day feast, so we had plenty of other things to eat. Live and learn, and let me know if I'm giving slow-cooker-cooked shrimp a bad rap. Have you tried it?
